Chocolate “Faux” Cookies!
Ingredients:
3 egg whites
20 drops or sweet enough to your liking sucralose
1 tsp vanilla
1 scoop chocolate protein powder.
Filling:
3 egg yolks
1 tsp vanilla
10 drops liquid liquid sucralose
2 tbsp heavy whipping cream
1/2 tsp xanthan gum
Directions:
Whip egg whites, cream of tartar, vanilla and sweetener till stiff peaks form.
Then simply fold in the protein powder. It will deflate a lot as you see in my photo.
Put the mixture into a piping bag or like I did put it in a Glad Freezer Bag and snipped off the corner to pipe the batter onto my non stick silicone baking mat (you can use parchment, non stick foil or if you have a truly non stick pan).
Bake at 300 degrees for around 15 – 20 minutes.
To make the filling put all ingredients for the filling except the xanthan gum over a made double boiler. By placing a glass or metal bowl over a low pot of simmering water. Mix until warm and the yolks have cooked. Add the xanthan gum and start whipping like crazy, it may take a few minutes to thicken. It really depends on how fast you do whip the mixture. The faster and harder you whip xanthan gum it thickens.
