Mexican Style Pork Sirloin Roast (boneless)!
Ingredients:
1.5 tsp salt
1.5 tsp pepper
1.5 tsp chili powder
1.5 tsp cumin
1.5 tsp onion powder
1.5 tsp garlic powder
1/2 tsp cayenne
1 tsp splenda brown sugar blend
1 cup diet pepsi
1 2.5 boneless pork sirloin roast
Directions:
Put roast in a pan that has a lid. Pour in the pepsi and sprinkle all the seasonings on the meat and bake for 1 hour at 350 degrees. Meat should be done at this point, however I want it to fall apart! So I put it back in the oven at 300 degrees for another 1.5 hours (till the hubby came home). It was so tender that you just had to push it with a spoon and the meat shredded apart! Amazing! I like this better than a tenderloin!
For dinner I had left over cauliflower that I made into a Spanish Faux Rice and a side of meat with cheese and sour cream, plus a fake burrito. I took some fiesta blend cheese and spread a very thin layer around a frying pan while it’s hot, it melts. I let it cook till it looks like it’s gonna start burning and I put the meat down the center and flipped the sides over the center like an omelette kinda.
That turned out amazing my burrito was like a enchilada, it was fabulous!
I cannot give you the carbs and all of that tonight cause I didn’t count them, I just know what I ate was around 8 carbs including that cauliflower. Here is what the end result was and my dinner.4
