Cocoa Cream Cheese Pancakes!
So this morning I decided since I have this 0 net carb cocoa powder by Shurfine, I thought I’d make us cocoa cream cheese pancakes with a chocolate maple syrup. WOW This was so good! My son couldn’t even finish his serving, it was very filling! It made 14 small pancakes. We served 2 with them.
Ingredients:
4 eggs
4 ounces cream cheese
2 tbsp cocoa powder
1/2 tbsp NuNaturals No Carbs Blend Stevia
Directions:
Place all ingredients in the blender and blend till all mixed. You may have to use a spoon or rubber spatula to scrape down the sides of blender, cause the cocoa powder goes right up the sides when you turn it on. Heat a pan up with a teeny bit of butter, I don’t use a lot or it changes how the pancakes cook. I pour each one in and cover it up, let cook till bubbles form and then VERY carefully flip over. Repeat till complete.
Syrup:
For the syrup I simply took some Cary’s Sugar Free Pancake Syrup (1/3 cup) warmed in microwave and added 1 tbsp cocoa powder and mixed till smooth and warmed for a few seconds again and added 1 tbsp of butter to it and let it melt and stirred till smooth. Made a great chocolate syrup, however I didn’t include the nutrition info in the recipe. It’s 0 Carb though and 0 sugar! So that’s the most important thing right? 🙂
Makes 14 small pancakes
Serving size: 7 small pancakes
Fat: 16 grams (each piece has 2.28 grams of fat)
Saturated Fat: 16 grams (each piece has 2.28 grams of sat fat)
Net Carbs: 3 grams (each piece has .42 grams of carb)
Sugar (from Cream Cheese): 2 grams (each piece has .28 grams of sugar)

Hi Marie: can I use Hershey’s unsweetened cocoa? It has 3 grams of carbs and 2 grams of fiber and I know I subtract the fiber from the carbs so it’s really only 1 gram of carbs. I may not be able to find shurfine in my area. Thanks for putting these recipes out for us!!! You ROCK!

Now we can have high fat but what about high cholesterol and hardening of the arteries? Shouldn’t we worry about that?
I’ve been eating cheeseburgers wrapped in lettuce, had bacon, and butter in my food. Should I be worried?
