So, I have been busy lately trying recipes again. I need to get back on board, Again… Ugh! I am such a failure at this anymore, but I will never stop trying! I am down about 8 lbs from the last 4 days. So, yea, that makes me happy. I have not been up to myself the last month after an injury that resulted from a vicious pit bull attack. Yes, I know not all pits are vicious, but let me be clear this one is!
I needed something salty, bready and delicious without fail. I decided to make some Everything Bagels! These are my absolute favorite!
Delicious #LowCarb Everything Bagels
Delicious Low Carb Everything Bagels that are Grain Free! Yum!
- 1 tbsp coconut flour
- 1/2 c almond flour, ground finely
- 2 eggs
- 2 1/2 c mozzarella & provolone mix (Mozzarella is fine without provolone, that's just what I had available.)
- 2 tbsp baking powder
- 2 tbsp everything but the bagel seasoning
- 2 oz cream cheese

Preheat oven to 400 degrees and prep your pan.

Start by placing cheeses in a pan to get all melty.

While you keep checking the cheese, mix the almond flour, coconut flour, everything bagel seasoning, and baking powder.

Now that your cheese is all melted add it to your stand mixer with paddle attachment. Add the dry ingredients and the eggs and mix until thick and pasty

Scrap down the sides of the bowl clean off the mixing paddle and shape and shape your bagels!

I didn’t include the egg wash ingredients but I used one egg yolk and a bit of heavy cream. Brush your bagels and sprinkle more Everything but the bagel seasoning on them.

Bake for 15 minutes.
