Chocolate Peanut Butter Fudge!
So I got a hankering for some Fudge. I decided to give it a shot since I had some MorningPep Xylitol. Something I have learned about Xylitol is you have to use it and a little bit of sucralose with it. The combination is just like sugar! No Joke! This turned out super amazing!
Ingredients:
- 4.5 oz Smucker’s All Natural Creamy Peanut Butter
- 2 ounces Butter, + 1 tbsp Butter, separate from 2 ounces
- 4 tbsp MorningPep Xylitol
- 2.5 tbsp MorningPep Organic Dark Cocoa Powder
- 10 drops NuSweet Liquid Sucralose
- 1 tsp Watkins Vanilla Extract
Directions:
Put all ingredients in a sauce pan except the vanilla and the 1 tbsp of butter. Leave those aside.
Simmer on low-medium until all ingredients are mixable and hot. I let it cook until the xylitol was completely melted down. Do not over cook it or burn the chocolate. Keep it low if your stove is hotter than normal.
Once it’s all melted add the 1 tbsp of butter and vanilla to the mix and give it a quick stir and prep parchment paper or baking mat. I have a small round one. Put the fudge into stand mixer with paddle attachment and beat the shit out of it till it looks kinda dry!
Plop out and shape to a nice square like in my photo.
Cut into small squares, makes approximately 30 pieces.
