Cheese Crackers & Cheese!
So you are on a low carb diet and cannot have grains? What the hell can we do to have crackers? I miss crackers and cheese, crackers with chicken/tuna salad on them. So one day I was thinking I wanted some crackers to put egg salad on and I tried something and unbelievably it worked! So what did I do? I’ll share my recipe and remember the seasonings can be changed to suit your meal. If you’re having chili for dinner, make them with chili powder or cumin on them. You can also just salt them like regular crackers. These turn out amazing! No joke!
Here’s the recipe!
Ingredients:
4 ounces of Kerrygold Sweet Cheddar Cheese
1 or 2 Kerrygold Spreadable Cheese Wedges
pinch of each: salt, pepper, garlic powder, onion powder and cayenne.
Directions:
Preheat oven to 400 degrees, line a large cookie sheet with non-stick foil (the non-stick foil is crucial).
Finely grate the cheese using smallest side of grater. Place as many small piles of cheese as possible. I placed 12 twice, baked around 4 – 6 minutes, you need to watch them! If they get to dark they will burn! make one if you need to first and see how it comes out. Once these are all done baking I flip them upside down on top of a paper plate.
Once cooled put some of the spreadable cheese on these Delicious Spicy Kerrygold Cheese Crackers and Enjoy! You can see from the photos that you can spread cheese on these. You do have to handle with care, but you can put what ever you want on them! I have used them for several things, including egg salad and peanut butter for my son.
