Low Carb Cheesy Chicken & Veggies!
Ingredients:
2 TBSP butter
2 boneless chicken breasts or 10 ounces of boneless chicken
2 cups fresh frozen stir fry veggies
1 cup homemade chicken broth
1 cup water
1 cup great value fiesta blend fancy shredded cheese
1 tsp garlic powder
1 tsp salt
1 tsp pepper
Directions:
My chicken breasts were good sized so I beat them flat a little, then melted butter in pan. Seasoned chicken both sides with salt, pepper and garlic powder. I cooked on medium-low covered so it made lots of steam and juices, flipped and cooked a bit more, until done. Remove from pan & chop. There should be around a cup of juice, add the water and veggies cover on medium-high for around 5 minutes. Uncover and cook on high until the juices evaporate a little bit, add almost all the cheese and stir well. Let cook a few more minutes on low, add the chopped chicken and stir it in then top with remaining cheese and cover with the stove off for a minute or two, shouldn’t take long. There you have it a meal for 4 or 5 really depending on your tummy’s!
Oh I cannot have carrots so I made sure not to dish any out to myself, but the rest of them devoured it!
