Low Carb Sub Rolls!

Low Carb Sub Rolls! #LCHF #FakeBread #HealthyI bought some lunch meat that’s low in carb, but I wanted to eat it on something more like a sub roll. So I started searching different recipes and I tried to make my own version.  

Low Carb Sub Rolls! #LCHF #FakeBread #HealthyIngredients:

  • 1 1/2 c Almond Flour, Finely Ground
  • 5 tbsp Psyllium Husk, Finely Ground
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 tbsp Apple Cider Vinegar
  • 2 eggs
  • 3/4 c Boiling Water
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning
  • 2 tbsp Fresh Parmesan, finely grated (Set aside it’s for topping)

Directions:

  1. Preheat oven to 350 degrees, prep pan with non stick foil or a silicone baking mat.
  2. Put all of the dry ingredients in a bowl and mix them well with a whisk or fork.
  3. Crack the eggs into the dry ingredients as well as add the apple cider vinegar, stir it will be thick and pasty.  
  4. Add boiling water and mix well until a thick dough forms.  
  5. The dough will be sticky, but you’ll be able to hold it and shape it. So you can make three bigger rolls or make five smaller ones.
  6. Once you have them on the baking sheet ready for the oven. I did brush mine with egg white, sprinkled with (extra) onion powder, garlic powder, Italian seasoning, sesame seeds and the grated cheese. These are optional! You don’t have to do egg wash or nothing. 
  7. Bake for 45 minutes until nice and done.  
  8. Remove from oven, place on cooling rack and let them cool! I didn’t store these in the fridge. I didn’t want any moisture to form in the zip locks I stored them in.

This reminds me kinda of a wheat bread roll! This was absolutely delicious and mind boggling, because there was ZERO grains used!

    I just made your rolls they are in the oven and smell delicious! I read a comment somewhere on Facebook where you said you omitted the baking powder and vinegar and added yeast and the rolls raised higher. I wanted to do this but was afraid the boiling water would kill the yeast. How did you get around this? I really want to try this next time. Thanks
