I can’t have graham crackers, but I came across this awesome little extract called Capella Flavor Drops Graham Cracker! This stuff is amazing!
When you need a snack or something simple and sweet, this will do the trick.

Graham Cracker Crepes with Sweetened Cream Cheese! #LCHF
Ingredients:
Crepe:
- 4 oz Cream Cheese, room temp ((I use Philly Full Fat))
- 4 Eggs
- 1 tsp Vanilla
- 1 tbsp Swerve Confectioners
- 1 or 2 drops Liquid Sucralose ((Optional, but it works great))
- 3 or 4 drops Capella Graham Cracker Flavored Drops
Crepe Filling:
- 4 oz Cream Cheese, room temp ((I use Philly Full Fat))
- 1/8 c Heavy Whipping Cream
- 1 or 2 tsp Vanilla ((To your liking, I used 2 tsp))
- 1 tbsp Swerve Confectioners
- 1 or 2 drops Liquid Sucralose
For Cooking:
- 1/4 tsp Coconut Oil (for cooking in non-stick pan)
Directions:
Crepe:

Place all of the Crepe ingredients into the blender and blend until smooth and bubbly. Then blend once more just to be sure that cream cheese is demolished. I pour it into a dish that makes it easier to pour the crepes into the pan. I use a completely non-stick pan that has been lightly oiled with coconut oil.

Pour your crepe into the HOT NON-STICK, LUBRICATED (with coconut oil) and swirl the crepe batter to coat the entire pan. Let this cook until the thin edges are browning nicely and almost seem crunchy. Carefully flip it. if it’s too soft, turn your heat down and wait a little bit. You may have to try a few times. If it’s not fully cooked it’ll tear, boom! So just be careful, and you can do it!
Crepe Filling:

Place all the ingredients in mixing bowl and mix until creamy and the cream has whipped up too, and it’s not runny, but thick and light.

Once the crepes are cooled completely you can spread the cream cheese mixture over them and fold in half and fold in half again. or just roll them up. It’s really your choice. You can stack the circles and cut like a cake too! 🙂
