Low Carb Brunch!
I wanted to keep it simple today for my brunch.
Ingredients:
- 2 tbsp butter
- 2 eggs
- 1/2 oz broccoli
- 2 oz rotisserie/roasted chicken breast
- 2 tbsp parmesan cheese
- Seasonings: sprinkles of garlic and onion powder, pepper and salt
Directions:
- Start by melting butter in non-stick frying pan.
- Add chopped up broccoli and saute’ for a minute.
- Add chopped up chicken breast, stir and allow it to cook up with the broccoli.
- Next beat your eggs in a bowl and then pour it over the chicken and broccoli, the butter will be pretty well gone now and the eggs cooked up fast.
- Sprinkle with Parmesan and Serve!
