“Faux” Corn Tortilla Shells!
I sometimes just really want to have something I’m used too, as far as old foods. I know some people say stop trying to recreate things. Well I don’t care what those people say! I try to make things I can get my family to eat as well. If it requires making something similar I’m happy to do so. Plus they taste amazing!
Ingredients:
- 1.5 c finely shredded mozzarella
- 1 egg
- 2 tbsp coconut flour
- 1 tbsp cream
- pinch of chili powder & cumin
Directions:
First place your ingredients in dishes so you’re ready to just pour them in when ready.
Then nuke the cheese until melted pretty much. But keep checking it do not over cook cheese.
Add remaining ingredients!
Stir, stir, stir. Scraping sides of bowl down.
Plop it out on a silicone baking mat and then knead it until it’s well mixed and the coconut flour is worked in totally.
Next make 4 balls as equal in size as possible. I put them between the bakers mat and rolled them out then use a medium sauce pan’s lid to cut the rounds out.
This makes four shells. Bake for 10 minutes at 350 degrees.
Once they’re done flip them and rest on a cooling rack.
Store in an air tight storage bag or container!
