Thick Hearty Taco Soup!
A friend on facebook made this soup and it inspired me to make my own kind, but similar. Thanks Nancy! So here goes! Start with a big ole pot and lid. Now for the rest!
Ingredients:
- 1 lb ground beef
- 1/2 lb sliced taco seasoned cooked top sirloin
- 2 ounces chopped onion
- 3/4 cup tomatoes and green chilis
- 1/2 cup taco bell homestyle original mild taco sauce
- 2 cups water
- 2 beef bouillon cubes (or skip 2 cups water and bouillon and use 2 c beef broth)
- 1/2 tbsp chili powder
- 3/4 tbsp cumin
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/2 tbsp nusalt
- 1/2 tbsp pepper
- 1 tsp coriander
- 2 packets splenda
- 4 ounces cream cheese (whipped has less carbs)
Directions:
Put onions & beef in pan. put it on low to start. Put 2 cups water in the microwave or boil it to dissolve the beef bouillon cubes. Add the beef broth to the beef and onions and stir it till all mashed and mixed well. You want the same kind of beef texture you’d get from taco bell beef, unless you like chunks! I like fine chopped beef. Let this simmer for a few minutes while you open the can of tomatoes and green chilis add 3/4 c of those to the mix you can include the juice, I did. I added all seasonings now & the taco sauce, it’s simmering away in there!
This is what it looks like after I added the cream cheese to the mix and then went ahead and the jalapenos, oh I added the steak too!
Serve and add cheese and sour cream! I make homemade sour cream! Recipe coming soon! Enjoy! Cook this for a while it’ll thicken up and you may need to add water to it! Especially after refrigeration!
