Sugar Free Faux Mounds Nuggets!
Chocolate coating
2 tbsp butter, melted
1 tsp coconut oil
1 tbsp bakers cocoa (shurfine equal dietary fiber to carbs)
1/2 tsp NuNaturals No Carbs Blend Stevia
Coconut Cream Filling
1 ounce cream cheese
1/2 tsp NuNaturals No Carbs Blend Stevia
1 cup Wild Oats Organic Dry Coconut Flakes
Directions:
Start with Filling. Slightly warm the cream cheese to make it soft and manageable, add stevia and mix well. Add the coconut flakes and mix these ingredients till you have a thick and pasty like mixture. You need it where it’s packing. I used a tablespoon to make 8 pieces. Place on a rack and put them in the freezer. Let them sit in there about 20 minutes. You want them good and cold so coating sticks fast.
Chocolate coating melt butter and coconut oil together, mix the cocoa powder in and combine till smooth. Add Stevia and mix well. Now I use a wire rack right over my chocolate bowl so the excess drips back into the dish for reusing. You may get close to running out, but no worries it should cover all 8 of them, two of my bottoms didn’t have chocolate but it was still good!
Place them back in the freezer and let set, store in freezer bag and keep them in the freezer.
Trace Carbs per candy. Fat depends on what products you use.
