Chocolate Coconut Clusters!
Ingredients:
2 tbsp butter
1 tbsp cocoa powder (shurfine has equal dietary fiber as carbs so zero net carbs)
1/2 tsp NuNaturals No-Carbs Blend Stevia
1 cup unsweeted dry coconut flakes (Wild Oats Organic coconut has equal dietary fiber as carbs so zero net carbs)
Directions:
Melt butter in a bowl (30 seconds in my nuker), add cocoa powder mix until smooth, add stevia. Mix well if it gets a little thick pop it in the nuker for another 10 seconds. Stir in the coconut and mix well until all of the coconut flakes have been coated. This makes 8 half filled mini muffins. Pack in the silicon muffin thing and freeze for 10 or 15 minutes. Keep them stored in freezer in a ziplock.
