Chocolate Flour-less Microwave Cake!

So tonight I was really wanting something tasty and sometimes I have to give in to these cravings.  So giving in I try to make it Low Carb High Fat.  This may not be really High in fat, but it’s low in carbs, flour-less, sugar free and delicious!

Ingredients:
Cake
2 Eggs (2 Carbs)
1 TSP Pure Vanilla Extract
2 TBSP Heavy Cream (2 Carbs)
1 TBSP Baker’s Cocoa Hershey’s (1 net carb)
6 Packets NuNaturals No Carbs Blend Stevia
1 TSP Baking Powder (1 carb)
1 TBSP Melted Butter or Coconut Oil
1 TBSP NuNaturals Oat Fiber (0 net carbs)
1 TSP Cary’s Sugar Free Syrup (0 net carbs)

Toppings:
Whipped Cream
1 TBSP Heavy Whipping Cream (1 carbs)
1 TSP Cary’s Sugar Free Syrup (0 net carbs)
1/2 TSP Pure Vanilla Extract

Optional Toppings:
1/2 TSP NuNaturals Cocoa Stevia (2 carbs)

Directions:
Crack egg in bowl and beat until well mixed. Add all of the liquid ingredients and mix well, then add the dry ingredients and mix until the batter is smooth. There should be NO lumps in this batter, I simply used a hand whisk. I used coconut oil to prepare 2 microwave safe bowls, I basically dipped a paper towel in my coconut oil and then rubbed it around in the bowl. Then added half of the cake batter to the bowl and microwaved for 75 seconds, until the top looks dry and not wet any more. Once done remove from microwave and do the next bowl.

This recipe could make 3 small cakes! Let the cakes cool if you’re using the whipped cream. My son loves a thin layer of peanut butter on his. Which ruins the 0 sugar part of it lol, but the whipped cream is for one cake, so double it for both cakes or triple if you make three small cakes.

Next beat the whipped cream and other ingredients until it’s thickened like whipped cream and top your cooled cake with it.

If you use the cocoa stevia 1/2 tsp be sure to add 2 more carbs to each serving using it, I didn’t include the cocoa stevia below in listed carbs.

Carbs for Cake only(if you make two): 5.5 Carbs
Carbs for Cake only(if you make three): 4 Carbs

Carbs for Cake with Whipped Cream(if you make two cakes): 6 Carbs
Carbs for Cake with Whipped Cream(if you make three cakes): 4 Carbs

Honestly if you can make three, I would recommend it. I was able to share mine with the hubby and was still satisfied!
