Low Carb Cheesy Beef Taco Bake!
I was searching recipes and wanted to make something delicious for dinner, something Mexican too. I love Mexican food it’s awesome! So I decided to go with this taco bake and it turned out Freaking Amazing! So enough blabbering here is the recipe!
Ingredients:
Taco Seasoning
1 tbsp Chili Powder
1/2 tbsp Cumin
1/4 tsp Cornstarch
3/4 tsp Paprika
1/2 tsp Coriander
1/4 tsp Cayenne pepper
1/2 Packet NuNaturals No Carbs Blend Stevia
Directions:
Mix all ingredients well and set aside.
Taco Bake Ingredients:
1 lb Ground Beef
2 tbsp Small Diced Onions
2 tbsp Small Diced Green Bell Peppers
1 batch of Taco Seasoning as listed above
8 ounces of Cheddar or Mexican Blend Cheese
3 Eggs
1/4 cup Heavy Whipping Cream
Directions for Taco Bake:
Start by browning the beef with onions and green peppers. Drain grease off the beef and add 3/4 taco seasoning and water to pan, simmer a little bit longer till water has evaporated. Add half the cheese (4 oz) and stir. I have non stick skillets I can bake, I oiled another one and and dumped the meat mixture in it. Top with the remaining cheese. Set aside.
Mix eggs, remaining taco seasoning and the heavy cream and beat together until well mixed and looks like a thick seasoned creamy sauce. Evenly pour over the cheese on top and bake 30 minutes 375 degrees. Remove from oven let stand 5 minutes or so, cut and serve.

I topped mine with Breakstone Sour Cream, Taco Bell Home Original Mild Sauce and less than a serving of Black Olives.
