Less Than One Carb Flax Bread!
I came across a recipe on Facebook a friend shared and I was like Hmmmmmm I want to try this! But when I read the directions they weren’t exactly correct and I made some adjustments.
Ingredients:
1 1/2 c golden flax meal
1/2 c NuNaturals Oat Fiber
5 egg whites
2 whole eggs
5 TBSP coconut oil
1 TBSP Baking Powder
1 tsp salt
1/2 c water
3 packets NuNaturals No Carbs Blend Stevia
Preparation: Preheat oven to 350 degrees and line a bread pan with non stick foil or oil it lightly if it’s a non stick pan.
Directions:
Mix dry ingredients set aside
set egg whites in mixer to start beating until stiff.
Mix all wet ingredients in a mixing bowl, give them a quick whisk and add dry ingredients to the wet.
Stir until mixed batter will be thick but not unworkable! The whites should be done and pretty much stiff peaks. You can flip bowl upside down and nothing falls out. Fold the thick batter into the egg whites in thirds until completely mixed.
Pour in to prepared pan and bake for 30 – 35 minutes. Once timer goes off turn off oven you can let it sit in there for a few extra minutes.
This is a good bread it tastes grainy, kinda like you are eating a whole grain bread. But you’re not!

Realistically this is Zero Carb! However the eggs added 7 carbs and the baking powder added around 3 carbs. The loaf should come out to around 14 ore more slices. The oat fiber and flax both have carbs, but also have dietary fiber that makes their net carbs 0.
