Flathead Bread!

So I found this recipe online for Fathead Pizza and a girl used that recipe and she made these bagels like buns.  I decided this was what I wanted to make.  I did and WOW they were so good! I am very, very pleased with this.  Now if you are a person who loved whole grains and misses them, then this is for you! If you leave a few almonds slightly bigger it’s like the grains in whole grain bread.  So here we go with the recipe!

Flathead Bread!

  • 1 1/2 c mozzarella cheese
  • 3/4 c almond flour
  • 2 tbsp or 1 oz cream cheese
  • 1 egg
  • pinch garlic powder
  • pinch onion powder
  • pinch salt
  • pinch of sesame seeds (optional I did add these to mine I had less than a 1/2 tsp left in my jar.)
  1. Preheat oven to 425 degrees and prep pan with non-stick foil or a baking mat.
  2. Put mozzarella in a microwave-safe bowl with cream cheese like this.
  3. Nuke it for 1 minute and then stir, nuke for like 30 more seconds cheese will be hot and melted. Stir again and add egg and almond flour stir until it looks like it’s combined. Then, Yes! Wet your hands because otherwise, it’ll stick to them. Shape then season with garlic powder, onion powder, and salt and bake for 8 to 10 minutes.
  4. I baked almost 10 minutes, but the original recipe was 8 minutes. I preferred a little more bake on it. They came out perfect though!

      I wouldn’t recommend these on induction. I lived and learned lol although some people can eat the nut flours, I cannot at this time. I would say try them and see. They were delicious and went fast by everyone in house even though I’m the only one doing LCHF lol

    Just made these with Everything Bagel spice on top. Will try them with breakfast sandwiches. I assumed this recipe made 4 rolls based on the picture? They look so good coming out of the oven and smell wonderful. I love using for flathead pizza, so I may have just found my replacement for high carb Everything Bagels!

      These are so yummy! but I can’t have the almond flour myself. It totally stalls me. So this is for some who are closer to goal or can handle the almonds. 🙂 Enjoy! Thanks for commenting!

        I swapped out the almond flour for a combination of pork rind dust and oat FIBER (not bran). Both are zero carb and they were great! Try it.

      Last night I used this dough to make bagels in a Wilton donut pan. Made 6 bagels. Divided the dough into 6 pieces and rolled into logs on a silpat…the pan was nonstick so I didn’t use Pam and they came out perfectly! Baked for 15-20 minutes.

      Hi Tonya,

      I think you could do that. I figure these things out by trial and error 🙂 just give it a shot see what comes out! I do like coconut flour I got my first bag about a week ago! Let me know how it turns out.

      Probably about 4 net carbs. It depends on the products used the carb content can be different.

        Yes I love this bread. I put all the ingredients in my fit pal app and came to 9 carbs for me . My friend says it is because of the cheese and almond flour. Can u use any type of cheese ? I used mozzerlla but it had 1 carb in 30 grams.

          It’s because of all the ingredients. However different cheeses and brands of almond flours have different amount of carbs in it. The almond flour has dietary fiber also, are you deducting that too? Just curious. THanks for reading and letting me know you love the bread! 🙂 🙂 🙂

      I did it stove top, as I don’t like using microwaves. It worked GREAT! I just made sure to do it low and slow and stirred often. Took it off the heat, let it cool slightly in a glass bowl, then added other ingredients and mixed with my hands. I also used fresh mozzarella instead of shredded. So yummy.

    I don’t know what I do wrong! I followed directions and mine look terrible. How many carbs are in these?

      Hi Barb, I’m not sure what could have happened. Also, the carb count will vary by-products used. Some almond flour has slightly different counts, as with some cheeses. You can count the total amount of carbs in the ingredients you used. I never count eggs, but I count everything else.
