Stuffed Peppers #LCHF

Stuffed Peppers!

Okay so I was looking at facebook today and someone shared this delicious looking recipe for stuffed peppers and well I know how to make them and need no recipe.   I decided to take some cauliflower and put it in the food processor and pulse till it was like rice.  I needed 1 cup of the ground up cauliflower.   It was so good reminded me of rice in the meat mixture.

Ingredients:
1 c grated cauliflower (small like rice)
1/2 c chopped onions and bell peppers
3 tbsp butter
8.5 oz ground chuck 80/20
4.5 oz ground pork sausage (mild)
1 1/4 c water
2 tbsp tomato paste
3 tsp garlic powder divided into 3 tsp one for each pan, sauce, cauliflower and meat.
1/2 tsp chili powder
1 tsp salt
1 tsp pepper
4 medium peppers
1 cup fiesta blend or mexican blend shredded cheese
1/6 cup organic golden flax seed

Directions:
First thing is to process your cauliflower, just do enough to equal 1 cup of it grounded up. Put butter in pan and melt on medium heat, add the cauliflower, half of the peppers & onions, 1 tsp garlic powder, salt and pepper.

Cook up the beef and sausage together and chop until chopped nice and fine. Let cook through stirring as often as needed, drain grease off of the meats and put back in pan with other half of onions & peppers, salt, pepper and 1 tsp garlic powder.

In a sauce pan add 1 1/4 cup water to the tomato paste and add the chili powder, pinch salt & pepper, 1 tsp garlic powder. Simmer till all mixed and heated thoroughly.

Add 1/3 cup of cheese to cauliflower, add 1/3 cup cheese to meat mixture stir them and then combine meat and cauliflower. Add half of the seasoned tomato sauce to the meat and cauliflower and stir well.

Cut off the tops of the bell peppers and remove any white strips with a spoon and then fill just about to the top. Add a little extra sauce on top then top with cheese. I added a little bit more water to the remaining sauce and poured it into the pan. So hopefully it would steam the peppers from the bottom too.

I am not a big fan of peppers, so I didn’t eat the pepper that my meat mixture was in, I simply ate the guts! So any carbs in them whole peppers I didn’t eat. I should have, but I cannot eat them they are disgusting lol I know I’m crazy. I like the flavor, but not their texture unless cooked too mushy.

Calories 445, Carbs 7, Fat 35, Protein 23, Sodium 812.  This was 70% Fat!
