Maple Biscotti Cookies! #LowCarb #LCHF

I wanted to make something new and different, but delicious and low carb! I thought about biscotti, making a hard cookie cannot be that hard, can it? Na! Let’s give this a go!

Low Carb Maple Biscotti Cookies!

  • 2 eggs
  • 1 teaspoon maple extract
  • 1/2 cup splenda brown sugar blend
  • 1 1/2 cups almond flour
  • 1/4 cup + 1 tbsp coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  1. Beat together the eggs, maple extract, splenda and mix well, until frothy.
  2. In separate bowl, combine the almond flour, coconut flour, baking soda, and salt.
  3. Add flour mixture to wet mixture & mix until you have a nice cookie like dough.
  4. On a silicone baking mat lined cookie sheet make a long rectangle, damp hands help a lot with sticking!
  5. Bake a time 350°F for about 20 minutes.
  6. Remove from oven and slice into pieces.
  7. Lay each piece on the side in baking pan.
  8. Bake slices for about 12-16 minutes at 350°F until toasted.
  9. Cool and serve or serve warm if you want!
