Spicy Cheese & Bacon Stuffed Chicken! #LCHF #YUM

Spicy Cheese & Bacon Stuffed Chicken!

Tonight I wanted something I thought would be rockin’ and let me say I hit the nail on the nose with this one!

Ingredients:

  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/3 c FINE shredded mozzarella
  • 4 ounces WHIPPED cream cheese (less carbs)
  • 10 slices 4 raw, 6 cooked chopped bacon
  • 20-22 La Costena Jalapenos (0 carb)
  • 1 tsp La Costena Jalapeno Juice (optional)
  • 2 boneless chicken breasts

Side Dish Ingredients:

  • 10 Brussel Sprouts
  • Leftover Bacon grease from making chicken
  • Sprinkle of onion & garlic powder with black pepper and Nusalt

Directions:

Preheat oven to 375 degrees, prepare pan with a rack on it.

Start by cutting up and cooking 6 slices of bacon.

While that’s cooking put cream cheese, mozzarella cheese, seasonings in a bowl (jalapeno juice now if needed).  Combine well until thoroughly mixed.

Next Start by trimming off the yucky white stuff from the edges of chicken.  I then cut a hole into the fat end of the chicken, stuck my knife down while holding chicken on each side to kinda guide and feel that I don’t poke through the chicken.  Then pull out the knife, only after you went far enough down inside the chicken.  Put a pair of kitchen scissors in the hole you made and open them slowly! You’ll nicely open the chicken up inside! So much you can stuff pretty much all of the filling into.

Here are the two I did. You can see it almost looks like a fish opened up at the heads end.

Your bacon should be done by now, if not just wait for it.  You want it crispy, cause it will soften some in the mixture.  Be sure to cool the bacon on paper towel on top of paper plates or however you do it. Stir bacon into the chicken and then proceed to stuff that chicken you made the holes in.

I took a couple toothpicks and really closed up the holes good and then wrapped two slices of bacon around that end of both pieces.

I did season the bacon with same seasonings plus Kiva Sweet Smoked Paprika that stuff is Amazing! Enhances the flavors of everything I add it too!  Put in oven to bake for the first 35 minutes

After about 15 minutes of the Chicken being in the oven start by heating that bacon grease back up and cut all of the brussels in half and once the bacon grease is hot put the brussels cut side down in the pan (like shown in photo below)

Cook them for about 10 minutes, maybe less depending too on how tender you like them.  Then flip them over and cook another 10 minutes.

Crank oven to 400 and bake about 15 more minutes, just watch the bacon so you get it how you want it.

Remove from oven and let rest 5 – 8 minutes then serve with brussels! So Delicious!
