Noodles For Spaghetti!

I searched the internet and found this recipe. I’m not sure where it was but you could probably find it if you search Low Carb Egg Noodles.  These turned out freaking amazing! They can trick the brain and the mouth!

Ingredients:

  • 1 cup mozzarella cheese shredded
  • 1 egg yolk

Directions:

Melt cheese for about 45 seconds till it’s all melty and a glob like in this photo.

Then take one egg yolk

add it to the cheese and mash the yolk into the cheese attempting to combine it.

Then nuke it for about 15 – 20 more seconds

Put it between either two baking mats, foil or parchment paper.

Then Roll it out!

Then I used a pizza cutter to cut noodles.

Then place noodles on a rack and refrigerate till ready for use LATER! (about 4 hours later)

Meanwhile make your sauce and once you’re ready for noodles, no boiling is required! You simply stir the noodles into HOT sauce you have made.  It will soften the noodles and warm them! This turned out so Good!

This is perfect. I did LC/Keto for quite a long time and then one night had pizza. My own fault as I didn’t preplan and hangry attitude set in. LOL Since then it has been so hard for me to go back, especially when I have a blog full of recipes that I make for my family. I’m good with keeping mozzarella and eggs on hand so I am going to have to give this a try as I head back into low carb world.

and i totally know what you mean, my other blog is dalevillealabamakitchens.com and it’s totally filled with all the stuff that took me to almost 400 lbs! lol I don’t cook like that now, I do make stuff still my family eats but I always make myself something totally separate cause most days I eat only once a day and a snack. I don’t eat unless hungry, if I do fail it’s still mostly low carb stuff I eat lol

Have you tried freezing these for a quick no planning ahead meal? I’m thinking of throwing them in boiling water straight from freezer?

Nope I haven’t done that. I don’t know that I would put them all in the water! Do a couple first! You may end up with a ball of cheese! I just cannot imagine boiling these even for one minute. However if it works do come back and tell please!!
