Jalapeño Bacon Poppers & Pizza Poppers! #LCHF

Jalapeño Bacon Poppers & Pizza Poppers!

Ingredients:

  • 1.5 bags of 3.5 oz Baken-ets Plain Pork Rinds
  • 1 8 oz block cream cheese, softened (separated 8 oz and 2 oz)
  • 1 c parmesan cheese (separated 3/4 c and 1/4 c)
  • 1/4 c mozzarella cheese
  • 1/4 c cheddar cheese
  • 3 oz chopped jalapeño
  • 20 pepperoni
  • 3 slices of chopped cooked bacon
  • 2 eggs

Directions:

Start by cutting up and frying up the bacon and putting pork rinds into the food processor to make a crumb like breading.  Then chop up the peppers and pepperoni and just set aside.

Put two ounces of cream cheese in one bowl and 6 ounces of cream cheese in a bigger bowl.  The cream cheese will work better also if it’s softened.

Jalapeño Poppers 1st:

Take the big bowl of cream cheese and add the peppers and stir well, add the cheddar to these and stir it in, then finally add the parmesan cheese and mix until thick, if it doesn’t seem thick enough to easy form balls, add more parmesan cheese! Make balls out of the mixture and put on a plate in the freezer for about 15 minutes.  I made like 22 Jalapeño Poppers

Meanwhile…….

Pizza Poppers 2nd:

Take the 2 ounces of cream cheese and add the pepperoni (chop them across three times then back across the opposite way three times). Stir the pepperoni in and then add the mozzarella and 1/4 cup of parmesan, mix well.  It will or should be pretty stiff and hard to mix, I had to press and mush it together a little bit.  Do the same thing make balls and place in the freezer for like 15 minutes.  I made like 10 Pizza Poppers!

Back to the Jalapeño Poppers!

Remove from freezer and take get those ground up pork rinds and put them in a bowl, put the 2 eggs in another bowl and beat the shit out of them!  Start by dipping the balls into the pork rinds first, then egg then back into the pork rinds.  Cover the entire ball well, set on a paper plate and repeat with all!  Set back in fridge for a just a few minutes while you do the Pizza Poppers the same way!

In a pan melt some LARD enough to cover the balls! Fry the balls for approximately 1.5 minutes or less! Watch them! I did have my pan on medium heat.  I placed on a paper towel afterwards and made some of my Low Carb Salad Dressing and for my son I took 2 tbsp of tomato paste, 1/4 cup water, italian seasoning, oregano, basil, salt, pepper, garlic and onion powder, oh I did add a packet of splenda to it.  These were the dipping sauces.  They were freaking amazing!
