French Vanilla Cake w/Cream Cheese Icing!

Grain Free Cake! Who could ask for more!

Ingredients:

  • 6 eggs
  • 1/8 tsp cream of tartar
  • 24 packets splenda
  • 1 3/4 tsp vanilla
  • 8 oz cream cheese
  • 1 tsp baking powder
  • 3 scoops French Vanilla Designer Whey
  • 2 oz unsalted butter

Directions:

Pre heat oven to 300 degrees and use non-stick foil in an 8×8 inch square pan.

Separate 5 eggs by putting whites in mixer bowl and yolks in another mixing bowl and set the 6th egg aside.  In the whites add the cream of tartar and 8 packs of splenda (you can always sweeten to your liking if this is too much or too little), 1/2 tsp vanilla and start to beat! Take half (4 oz) of the softened cream cheese and put it in with the yolks and start to whisk it.  Add 8 packs of splenda and 1/2 tsp vanilla and whisk.

Meanwhile check the whites, you want them to be almost dry like, very, very stiff! If they’re done and you’re still doing the yolks put them in the fridge while you finish, I always end up doing that.  Once you’re back to the yolks add the protein powder and whisk.  It’s going to get super thick and pasty add that 6th egg.   Keep whisking, it’s a struggle but it’s thinning back out! 🙂 lol you can do it! Work that arm! LMFAO

Once yolk mixture is smooth scrape it all into the whites and fold it completely.  You don’t want to see any clumps of whites, get them mixed well!

Pour into a non-stick foil lined 8×8 square pan and bake for 30 minutes at 300 degrees.  Remove from oven place on wire rack if available and let cool.

Icing Directions:

Put 4 oz of softened cream cheese in same mixer bowl you did the whites in, yep so do the damn dishes LMFAO 🙂 and whip it, whip it good till smooth and add the butter, remaining sweetener and 3/4 tsp vanilla.  Beat until mixed and it will ice one 8×8 cake just like here in the photos! No more, No Less!
