Low Carb French Vanilla Waffles!

OLYMPUS DIGITAL CAMERA

So today I decided to go with some waffles for my son.  He enjoys eating the low carb diet more when I can make things that are familiar to him.  So these were perfect!

Ingredients:

2 ounces cream cheese ( i used philly)
2 eggs
2 packets splenda
3/4 scoop of Designer Whey French Vanilla Protein Powder
Pinch of cinnamon
1/2 tsp baking powder (optional) without the BP it’s IF!

Directions:

Place all ingredients in a blender and blend until smooth. Have your waffle iron or griddle ready, you can do these as pancakes too. Although I haven’t made pancakes with the protein powder mixed in yet, just the waffles, but I imagine it’s fine! I let them cook till golden and the thing says “hey I’m done open me”!

They were softer waffles and could probably be toasted but my son loved them and it’s just something extra I can give him for breakfast to change things up for my sweetie considering he’s eleven.  He could barely finish 3 of theses and it made 4 waffles, but with as much that wasted cause I over filled it the first time you could probably make 6 of them but they wont be solid, but more holy which is cool too! Kids wont mind!

These were delicious I ate the 4th one just plain and wow! I like!

Here is what it looked in my waffle maker, it did make one hell of a mess all over the counter all out of all sides of the machine….. I was a bit annoyed, but lesson learned! So do not over fill go easy the first time!

Waffles was one of the things I never got around to making when I was low carb. I tried a few varieties of pancakes. Some good, some bad. LOL. These sound and look pretty good!
