Cream of Mushroom Soup!

Ingredients:

2.5 oz onion, chopped
4 oz baby bella mushrooms, chopped
1 c chicken broth (swanson is what I used)
5 tbsp of chicken drippings (I baked chicken as the meat for this dish)
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder
1/4 c + 1/8 c heavy whipping cream
1/2 c water
3 tsp LC-Foods Thick n Saucy Thickener

Directions:

Put chicken drippings and chicken broth in a dutch oven, let simmer and add veggies. Simmer until tender. Add seasonings, heavy cream and water. Simmer on low for about 10 minutes. It will be really thin so you’ll need to add a thickener like LC – Foods Thick n Saucy Thickener, it works Great as you’ll see in photos!

I cooked the soup about 40 minutes total, only cause I’m slow lol It turned out great I served it with baked chicken thighs and buttered green beans. I ended up putting my chicken and green beans in the soup and eating it as a bowl of delicious low carb amazingness! LOL Whatever you want to call it I loved it!

This serves 3 small bowls, it’s perfect as a side dish! I recommend everything else you eat with this meal being super low or no carbs! The soup is approximately 9 carbs, just depends on brands.
