I wanted to make something new and different, but delicious and low carb! I thought about biscotti, making a hard cookie cannot be that hard, can it? Na! Let’s give this a go!

Low Carb Maple Biscotti Cookies!
- 2 eggs
- 1 teaspoon maple extract
- 1/2 cup splenda brown sugar blend
- 1 1/2 cups almond flour
- 1/4 cup + 1 tbsp coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- Beat together the eggs, maple extract, splenda and mix well, until frothy.
- In separate bowl, combine the almond flour, coconut flour, baking soda, and salt.
- Add flour mixture to wet mixture & mix until you have a nice cookie like dough.
- On a silicone baking mat lined cookie sheet make a long rectangle, damp hands help a lot with sticking!
- Bake a time 350°F for about 20 minutes.
- Remove from oven and slice into pieces.
- Lay each piece on the side in baking pan.
- Bake slices for about 12-16 minutes at 350°F until toasted.
- Cool and serve or serve warm if you want!
